Originating in Central Italy, this savoury, succulent and moist roast is an Italian tradition. To cook this porchetta to perfection, simply bake at 250ºF for 4 hours and finish at your oven’s highest heat to crisp the skin. For extra crispy skin, score the skin 1 cm apart before roasting so more fat can render. Buon appetito!
