Blue Cheese Dressing
Creamy, tangy, and full of blue cheese crumbles

Ingredients
- 2 tsp Dijon Mustard
- 3 tbsp white vinegar, preferably Champagne Vinegar
- 4 oz St. Agur Blue Cheese, available at our deli
- ½ cup extra virgin olive oil
- sea salt, preferably chunky French grey salt (Se/ Gris) or the flakier Fleur De Sel -available on our salt table
- fresh ground black pepper
Directions
- In a small bowl, use a fork to combine half the blue cheese, mustard and vinegar. Mash the blue cheese against the sides of the bowl until smooth.
- Add the olive oil and whisk slowly until combined. Add the remaining blue cheese and break into small chunks with a fork. Season to taste with salt and pepper.
- Best served chilled over a crisp lettuce salad.
