Greek Salad with Barrel-Aged Feta

Ingredients
- 1/8 red onion
- 1/8 sweet onion, Vidalia or Walla Walla when in season
- 2 cups tomatoes, wedged
- 1/2 a large Field or Long English cucumber
- 1/4 cup Kalamata olives or combine with dried Kalamata olives
- 4 oz Kalimera Barrel Aged Feta Cheese, crumbled
- 1/4 cup good quality extra virgin olive oil
Directions
- Slice the onions from top to bottom into half-moon shapes. Peel the Field cucumber and slice it into half-moon shapes (skip the peeling step if using a long English cucumber).
- Slice the tomatoes into wedges.
- Combine the vegetables in a bowl. Top off with olives and Feta cheese. Wait to add the olive oil (about 10 minutes before serving) to keep the vegetables firm and crisp. Mix gently and serve.
