Step 1: Prepare the Sauce
In a large bowl, whisk together:
- 1/4 cup olive oil
- 2/3 cup Parmesan cheese (grated)
- 2 tbsp fresh lemon juice
- 3/4 of the chopped basil
- Salt and pepper to taste
Set the sauce aside.
Step 2: Cook the Pasta
Bring a large pot of salted water to a boil. Add 12 oz spaghetti and cook for 1 minute less than the package instructions for al dente pasta. Drain the pasta, reserving 1/2 cup of the cooking water.
Step 3: Toss the Pasta
Transfer the hot spaghetti to the bowl with the prepared sauce. Toss to coat, then add:
- Remaining chopped basil
- 2 tsp lemon zest
Gradually mix in the reserved pasta water, 1/4 cup at a time, until the sauce reaches your desired consistency.
Step 4: Plate and Garnish
Divide the pasta into serving bowls. Top each serving with:
- 2 tbsp Stracciatella cheese
- A sprinkle of lemon zest
- Fresh basil leaves for garnish
Step 5: Serve
Season with additional salt and pepper to taste, if needed, and enjoy!
