Directions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, ensuring the edges hang over for easy removal. Set aside.
Step 2: Melt Butter and White Chocolate
In a microwave-safe bowl, combine 1/2 cup of butter and 4 oz of white chocolate chips. Microwave for 30 seconds, then stir. Repeat in 15-second intervals until fully melted and smooth. Set aside to cool slightly.
Step 3: Mix Eggs and Sugars
In the bowl of a stand mixer, combine 2 whole eggs, 1 egg yolk, 1/2 cup of brown sugar, 1/4 cup of granulated sugar, and 1 teaspoon of vanilla extract. Beat on medium-high speed until the mixture is thick, pale, and creamy (about 2–3 minutes).
Step 4: Incorporate the Melted Mixture
Reduce the mixer speed to low and slowly pour in the melted butter and white chocolate mixture. Mix until fully combined.
Step 5: Add Dry Ingredients
Sift together 3/4 cup of flour, 2 tablespoons of matcha powder, 1/4 teaspoon of baking powder, and 1/2 teaspoon of salt. Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
Step 6: Bake
Pour the batter into the prepared baking pan and spread it evenly. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Step 7: Cool and Slice
Allow the matcha blondies to cool completely in the pan before lifting them out using the parchment paper. Slice into squares for serving.
Step 8: Optional White Chocolate Drizzle
Melt additional white chocolate and drizzle over the cooled blondies for an extra touch of sweetness. Let the drizzle set before serving.
