Step 1: Preheat the Oven
Preheat your oven to 400ºF.
Step 2: Prepare the Potatoes
Quarter the potatoes into evenly sized pieces.
Step 3: Season the Potatoes
In a large bowl, toss the potatoes with olive oil and lemon juice. Season generously with salt and pepper.
Step 4: Arrange on a Baking Sheet
Line a baking sheet with parchment paper and spread the potatoes out in a single layer.
Step 5: Bake the Potatoes
Bake the potatoes for 25–30 minutes, or until they are tender and easily pierced with a fork.
Step 6: Let the Potatoes Cool
Remove the potatoes from the oven and let them cool for a few minutes.
Step 7: Prepare the Dressing
In a separate bowl, mix mayonnaise, minced garlic, shallots, fresh dill, and salt and pepper to taste.
Step 8: Coat the Potatoes
Add the slightly cooled potatoes to the bowl with the mayonnaise mixture. Toss until the potatoes are evenly coated.
Step 9: Garnish and Serve
